Chicken Parmesan PaninisLeave a comment

Paninis have been a recent obsession of mine, maybe because one of my favorite foods is a grilled cheese. I tried to make one last summer and failed completely. This time was much more successful. This recipe takes a spin on my Granny’s delicious chicken parmesan. My Granny always serves the chicken with no sauce or cheese, it is that good. Blair tends to like his chicken with sauces and different condiments so I thought this was the perfect way to please him.

Panini inspired by Annie’s Eats

What you’ll need
For the chicken:
4 chicken breasts
2 cups breadcrumbs
3/4 cup parmesan cheese
1/4 cup parsley
1 tsp. paprika
1/4 tsp. dry basil
1/8 tsp. pepper
1 tsp. oregano
2 tbsp. salt
1 c. melted butter

For the panini:
Slices of Italian or sourdough bread
Breaded chicken parmesan
Fresh mozzarella slices
Fresh basil
Marinara sauce

What you’ll do:
In a bowl, combine all the ingredients up to the salt. Dip chicken in melted butter, then roll in bread crumb mixture. Bake at 350 degrees for one hour.

Heat a well-oiled panini press over medium-high heat. Lay out bread slices, brush one side of each piece of bread lightly with olive oil. On two of the bread slices, layer mozzarella cheese and baked chicken pieces. Spoon a thin layer of marinara sauce over the chicken and sprinkle with as much chopped basil as you like. Top with the remaining bread slices, so that the oiled side is facing outward.

Cook the sandwiches on the preheated panini press until warmed through, so that the cheese is melted and the bread is golden brown. Serve with side ceasar salad.
