Lemon BBQ Meatloaves

I feel like meatloaf has a bad reputation. Meatloaf always seems to be the star in TV series and in movies that is the lunch in the school cafeteria that smells a little funny and nobody wants to eat. You know, scary mystery meat! My sister got this recipe from our Granny, shared it with me, and I have been making it for awhile now. This particular dish reminds me so much of Blair because it has been his chosen meal for his birthday for several years now then the Chicken Enchiladas came along. It is still one of his absolute favorites, and I don’t blame him. You start by seasoning meatloaf mix with some lemon juice which ends up keeping it very moist. After about 15 minutes of baking, you smother them with homemade BBQ sauce and top with a lemon slice. The flavors from the sauce and lemon together are incredible. It also makes for a very presentation in the end. I promise that this will change your mind about meatloaf for good.

Lemon BBQ Mini Meatloaves

1.5 lb ground meat or meatloaf mix
1/4 cup lemon juice
1/4 cup onion minced
1 egg slightly beaten
2 tsp seasoned salt
1/2 cup ketchup
1/3 cup brown sugar
1 tsp ground mustard
1/4 tsp all spice
1/4 tsp ground cloves
6 thin lemon slices

What you’ll do:
Preheat oven to 350 degrees. Combine meat, breadcrumbs, lemon juice, onions, egg, and salt. Mix well and shape into 6 mini loaves.

Place on a greased baking dish and bake 15 minutes. In bowl combine remaining ingredients except lemon slices. Cover loaves with sauce and top each with a lemon slice. Bake 30 minutes longer occasionally basting with sauce from the pan.

  3. Now this is the kind of meatballs I’d love to eat. The mini portions are perfect and the bbq flavor is a great way to kind things interesting.
