Potatoes are the perfect side dish. Usually I just roast some red potatoes and sprinkle some seasonings on them and serve them with sour cream. I wanted to try something that had a little more flavor and you didn’t have to smother in sour cream to enjoy them. These potatoes are so easy to make and definitely are an impressive side dish. They were the perfect compliment to the lemon bbq meatloaves.
Mustard-Roasted Potatoes by Barefoot Contessa At Home by Ina Garten
What you’ll need:
2 1/2 lbs red potatoes
2 yellow onions
3 tbsp olive oil
2 tbsp whole grain mustard
1 tsp. black pepper
1/4 cup chopped fresh parsley
What you’ll do:
Preheat the oven to 425 degrees
Slice the potatoes into quarters and place in a plastic freezer bag. Slice the onions and add to the bag of potatoes. Add the remaining ingredients expect for the parsley. Shake the bag so that the potatoes are evenly coated, empty out the bag onto a baking sheet lined with foil. Roast for about 50 minutes. Garnish with the chopped parsley and serve immediately.
