My good friend Bethany hosted a Glee premiere party last night and it was a hit! I asked her if I could bring anything for the event and I suggested these. I was trying to think of a dessert that brought you back to the days of your lunchbox in the cafeteria. These were another recipe from the same book I found the Applesauce-Spice cupcakes, so I knew they would be a winner.
1 cup of unsalted butter, plus more for the muffin tins
3/4 cup unsweetened cocoa powder, plus more for the muffin tins
2 tsp. baking powder
1/2 tsp. salt
3 eggs, room temperature
1 1/2 cups of marshmallow creme filling
What you’ll do:
Preheat oven to 350 degrees. Butter generously and dust 2 jumbo muffin tins with cocoa powder. Whisk together all your dry ingredients and set aside. Blend together sugar and butter until light and fluffy. Add in eggs, one at a time, blending after each one. Add in dry ingredients alternating with the cup of sour cream. Divide batter evenly amongst the muffin tins, bake for 25-30 minutes. Cool for about 5 minutes and then remove from the pan to cool completely.
Once completely cooled, whisk together butter and marshmallow filling. Cover with saran wrap and place in the fridge for 10-15 minutes. Transfer mixture to a pastry bag or a ziploc bag. You can cut the corner of the ziploc bag and treat it like a pastry bag. With a melon baller, scoop out the center of each cupcake and set aside (you will plug the cupcake after filling). Squeeze filling into the center and replace with the plug. With the remaining filling, you can decorate the top of the cupcakes.
