Fruit Parfait1 Comment

Trying to savor the last days of delicious berries! My sister whipped up this parfait for dessert for me tonight, but I was trying to think of ways that you could spice up berries and cool whip. This summer I made a delicious pie with a sugar cookie dough crust, cream cheese filling, and strawberries on top! The filling would have stepped up this parfait a notch, but then again I was happy she served me :)

Cream Cheese Parfait

What you’ll need:
8 ounce cream cheese softened
1/2 cup confectioners sugar
4 tbsp. of cool whip
berries of your choice

What you’ll do:
In a mixing bowl, blend cream cheese and sugar until peaks form. Fold in cool whip, put in more if you like your filling a little thinner. In a large glass, place some berries on the bottom, followed my the cream cheese mixture, repeat layers topping off with the whipped filling.

*If you want to make this into a pie, press a prepared (or your own) sugar cookie dough into a pie pan, bake until golden brown, I take mine out so it is a little bit gooey. Once cooled, place filling over pie crusts and top with your favorite berries.
