Funfetti cake is a simple vanilla cake that has rainbow sprinkles to make the batter colorful. I made this cake a few weeks ago for Blair’s birthday and my family decided to make it for mine the other day. Usually when I make Funfetti I buy the box and the icing, but I knew someone would have to have a recipe for it somewhere. So I scoped out some of my favorite blogs and found one at Annie’s Eats. My brother and his fiancee baked and decorated this particular cake alongside my mom. I think I need to take some tips on decorating since Blair’s cake looked nothing like this one. The recipe calls for two two 5-inch rounds, but the above is one 8-inch, so you can vary the size, but make sure you adjust the baking time.

What you’ll need:
1 1/4 cups flour
2 tsp. baking powder
1/2 tsp. salt
6 tbsp. unsalted butter, room temperature
1 cup sugar
3 egg whites
1 tsp. vanilla extract
1/4 tsp. almond extract
1/2 cup milk
1/4 cup rainbow sprinkles

What you’ll do:
Preheat the oven to 350 degrees. Grease and flour the size pan you are using. In a small bowl, combine your dry ingredients and set aside. In a large bowl, whisk together butter and sugar until fluffy. Add in your egg whites and extracts, mix until incorporated. Once combined, add in your dry ingredients in three additions, alternating with the milk. Using a spatula, fold in the rainbow sprinkles. Divide the batter evenly among your pans and bake about 30-40 minutes depending on your pan size. It took about 35 for two 6- inch pans. Decorate to your liking once cakes are cooled completely.
