Yes I have been totally MIA this past week. The beginning of the school year is always hectic preparing my classroom for the first day of school, but this year we had some extra glitches to deal with. My school was under construction all summer long so that meant packing up the entire classroom at the end of June. This past week was the first time we were allowed to get into the building and I must say it was quite the process unpacking all the boxes. After many long nights this past week, I am happy to say that my classroom is ready to roll for the kids on Tuesday. As a treat to ourselves, I got together with some ladies from work on Tuesday night and made the following recipe. I didn’t snag a picture, but I assure you this appetizer is super easy to make and delicious to eat!

Tortilla Roll-Ups

What you’ll need:
12 flour tortillas
8 oz. cream cheese, softened
1 cup sour cream
1 (4 ounce) can chopped green chiles
3 tbsp. chopped green onion
2 tbsp. chopped red pepper
12 ounces sharp cheddar cheese, grated
favorite salsa for dipping

What you’ll do:
In a mixing bowl, combine all ingredients except for the salsa. Lay out a tortilla and spread a thin layer of the mixture onto the tortilla with a spatula. Roll up the tortilla and secure with a toothpick. Refrigerate for at least 2 hours or overnight. When you are ready to serve, cut the roll ups into 1/2 inch pieces. Serve with your favorite salsa.
