Sounds strange doesn’t it, but trust me you will down this salsa in no time at all. We used the salsa over chicken last night for dinner and it was the perfect alternative to some type of dipping sauce. It is sweet and tart and would work well over any type of chicken or pork. It was so delicious, between 3 of us, we practically ate it all since we kept going in for seconds and thirds. I looked up other recipes for apple salsa and most of them suggested just going the traditional route with tortilla chips, next time I make it I will definitely be trying it with chips!

I didn’t have any fresh cilantro on hand so I just used dried leaves and also left out the jalapeno, but I will make sure I have those 2 ingredients in stock next time because it will most likely be even better!

Apple Salsa
As seen in Cooking Light

What you’ll need:
2 cups diced peeled Spartan apple (about 3/4 pound)
1/2 cup diced red bell pepper
1/3 cup fresh lime juice
1/4 cup diced red onion
1/4 cup minced fresh cilantro
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 jalapeño pepper, seeded and minced

What you’ll do:
Combine all ingredients, stirring well.
