Please excuse my lack of posting, my husband and I are in the process of moving. We move in this weekend so my time has been dedicated to packing and to make matters worse work is kicking my butt lately. Once we are unpacked and rolling, I will have many more posts!
If you are a snacking family, you will have no problem finding the following ingredients in your pantry. This chicken has a nice salty and crunchy bite to it. You could use any type of sauce that you like to dip this into, I ate it plain, but adding a sauce would have added some punch to the dish. My only complaint would be that I kept snacking on the chips while adding them to the food processor, if I have one weakness, it would definitely have to be any type of chip!
Potato Chip Baked Chicken
Recipe inspired by Woman’s Day
What you’ll need:
4 Chicken breasts or chicken cutlets
1 cup potato chips
1 cup tortilla chips
1/2 cup pretzel sticks
sprinkle of paprika
What you’ll do:
Preheat oven to 450 degrees. In a food processor, ground up chips and pretzels until you get a crumb mixture. In a shallow bowl, add buttermilk and splash of soy sauce. Coat chicken in buttermilk, then into chip crumb mixture. In a skillet, heat up olive oil, brown for 2 minutes on each side. Once browned on each side, bake for 8 minutes in preheated oven. Enjoy with your favorite sauce!
