I have been following the advice of some of fellow bloggers that I read on a daily basis. Lots of them mention that you should try and create your favorite restaurant meals at home. Every Friday as a treat to ourselves, my teacher friends and I go out to lunch. I look forward to the 45 minutes not in the building each week. My friend Lauren and I usually split a sandwich, one we love is called Rancher’s Chicken. It has chicken, roasted red peppers, mozzarella cheese, and a drizzle of ranch, so delicious. Blair requested Chicken Parmesan paninis for dinner one night this week, but I didn’t have time to bake the chicken on top of making the paninis. So I tried to transform the restaurant sandwich into one I could make at home! It was spot on and very easy to make, not to mention delicious to eat. This would also be perfect if you had leftover chicken.
What you’ll need:
2 chicken breasts
roasted red peppers
your choice of bread- I used Italian
What you’ll do:
Sprinkle chicken with salt and pepper. In a shallow pan, saute chicken until cooked through.Heat a well-oiled panini press over medium-high heat. Lay out bread slices, brush one side of each piece of bread lightly with olive oil. On two of the bread slices, layer mozzarella cheese and sauteed chicken pieces. Spoon a thin layer of peppers over the chicken and sprinkle with as much ranch dressing as you like. Top with the remaining bread slices, so that the oiled side is facing outward. Cook the sandwiches on the preheated panini press until warmed through, so that the cheese is melted and the bread is golden brown.
