And I am back at it! This has to be one of my favorite go to dishes when I am tired of packing the same old lunch for work. I love to pack a slice of this pie with a salad. Turns out to be a healthy, light, and fulfilling lunch. You could also make this into a side dish for a dinner as well. We also have used this as a brunch dish countless times, but usually do mini quiches with this same recipe. All you do is adjust the baking time! A very easy and versatile dish.
What you’ll need:
1 small onion chopped
2 packages frozen chopped spinach
1 pie crust (packaged or make your own)
2 cups mozzarella cheese
3/4 cup parmesan cheese
5 eggs (I do 1 cup of egg beaters which is equivalent to 4 eggs and use one additional egg)
salt, pepper, and nutmeg to taste
What you’ll do:
Preheat oven to 375 degrees. Saute onions in pan until tender. Thaw spinach, make sure to squeeze out excess water. In a large bowl, combine spinach, onions, cheeses, eggs, and seasonings. Mix well. Pour into prepared pie crust and bake for 40 minutes.
