I realize that this meal is not the most colorful of them all, but trust me it is absolutely delicious! My mom pulled this recipe out of the blue a few years ago, I made it for Blair and he was instantly hooked, I think the mushrooms helped (one of his favorites). There are many different ways to prepare this Russian dish, but this particular recipe is nice because you can get it whipped up in 30 minutes or less. This dish is sauteed beef with mushrooms smothered in a sour cream based sauce served over a bed of egg noodles. If sour cream were a food group, I would have no trouble filling that requirement. If you are looking for a new quick weeknight meal to try, here it is!

Beef Stroganoff

What you’ll need:
1 lb. boneless sirloin steak, cut into strips
3 c. sliced mushrooms
1/2 c. chopped onions
1 tbsp. butter
2 tbsp. flour
1 c. beef broth
1/4 c. dry sherry
3/4 c. sour cream
1/2 tsp. salt
1/8 tsp. pepper
egg noodles

What you’ll do:
Sautee beef 2 minutes, remove from pan. Add mushrooms and onions to pan, saute 4 minutes. Add mushroom mixture to beef. Melt butter in pan, add flour. Cook 1 minute, stirring with a whisk. Gradually add broth, cook 1 minute or until thick and bubbly. Add in dry sherry, salt, and pepper. Cook until beef is no longer pink. Remove from heat and stir in sour cream. Cook egg noodles according to package directions, serve beef over egg noodles.
