I think that I have tried mousse only about once in my life so when I stumbled upon this recipe I was intrigued. Martha has a selection of Valentine’s Day recipes on her website and this was one of them. I scanned the list of ingredients and realized I had everything already on hand. I hate to buy certain things at the store for only one use so I try to find other recipes where I can use what I have leftover. I had a small carton of heavy cream from the last time I made ice cream and the expiration date was looming so I decided to surprise Blair with some dessert in the middle of the week.

This mousse is rich and very decadent. The taste is very similar to that of the lava cakes so if you are not a chocolate lover this dessert is not for you! It turned out thick and smooth, but wasn’t too heavy when you actually ate it. It is amazing how with a few simple ingredients you are able to achieve pure bliss.

Thank you to everyone that participated in my poll, looks like many of you are staying in and cooking for your loved ones! Blair and I will be going out to one of our favorite new places, Inde Blue. They offered free dessert with every purchase of an entree, it was too good of a deal to pass up!

Chocolate Mousse

What you’ll need:
4 large egg yolks
1/4 cup sugar
Pinch of salt
2 tablespoons unsweetened cocoa powder
2 ounces bittersweet chocolate
3/4 cup heavy cream

What you’ll do:

Finely chop chocolate; reserve. In a double boiler, whisk yolks, sugar, and salt until sugar has dissolved and mixture is warm to the touch, 2 to 3 minutes. Off heat, quickly whisk in chopped chocolate until melted and cocoa until smooth (mixture will be thick). Cool to room temperature.In a medium bowl, whip cream until soft peaks form. Whisk half of whipped cream into room-temperature chocolate mixture. Gently fold in remaining whipped cream with a rubber spatula. Divide mousse among four serving dishes. Chill at least 2 hours and up to 1 day.Remove mousse from refrigerator 15 minutes before serving. Garnish with shaved chocolate.
