Well yesterday’s weather was absolutely GORGEOUS! It made me long for BBQs and grilling season, there is a tiny little glitch though, we don’t own a grill. We need to get on that! If you are grilling, then I suggest making this delicious side dish. It is a great addition to any BBQ and is a nice change up from a traditional potato or pasta salad. I don’t normally like raw broccoli, but I could eat the entire bowl of this salad. The dressing is tangy and the bacon adds a touch of salt to the salad. I didn’t have any raisins on hand so I skipped those, but I know they add even more flavor since this is my mom’s recipe. This dish comes together in no time and Blair even said that he would always eat broccoli if it was served this way! I am getting so excited for all the produce to start popping up, what dish are you most excited for this spring/summer?

Broccoli Salad

Ingredients:
For the salad:
1 big bunch broccoli, cut into bite size pieces
1/2 cup chopped walnuts
1/2 cup raisins
6 slices bacon, fried and chopped
For the dressing:
1 cup mayonnaise
2 tbsp. apple cider vinegar
1/4 cup sugar

What you’ll do:
Combine the broccoli, walnuts, raisin, and bacon in a medium sized bowl. In a separate bowl, mix together mayo, vinegar, and sugar with a whisk. Drizzle over other ingredients, toss together until broccoli is completed coated. Refrigerate covered several hours or overnight.
