Easy? check. Delicious? check. Served with avocado? check. If you couldn’t figure it out I love avocado and will serve it will practically anything. This meal comes together in no time and is the perfect meal for a busy weeknight. I can’t wait to do this on the grill rather than inside on the grill pan, come on summer! Even though there are not many ingredients this chicken does not lack on flavor. I have quite the obsession with honey mustard so I knew I had to whip it up for dinner one night. I served the chicken inside a wrap with some delicious fixings that you can find below. I love when simple ingredients come together so beautifully for a delicious meal!

Caramelized Honey Dijon Chicken

What you’ll need:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1/4 cup honey
1/4 cup dijon mustard
1-2 tablespoons spicy mustard
salt & pepper

For serving:
red pepper
cheddar cheese

What you’ll do:

Heat a skillet on medium high heat and add olive oil. Pat chicken dry with a paper towel so it is dry. Season with salt and pepper generously. Add chicken to skillet and brown on both sides, about 6-8 minutes each, depending on the thickness.

In a bowl, combine honey and both mustards. Whisk well.

Remove chicken and while it is still hot, brush on mustard. Serve!
