Hopefully by 3:00 this afternoon I will be sipping something fruity just like this, on the beach with a book in my other hand. I tried to concoct my own smoothie a few weeks and it turned out all wrong. I am not quite at the expertise when I can throw things together in the kitchen and expect them to turn out delicious. I know its just a smoothie but the consistency was all wrong. I am still just a very good recipe follower, but hopefully as I gain more experience I will be able to whip things up on my own.

This particular smoothie is interesting because rather than using plain old ice, you freeze coconut water to give a subtle hint of coconut. I was hesitant to try this because I tasted the coconut water on its own and did not care for it. I stuck to the plan though and I am really happy I did. This was the perfect addition to some steel cut oats one morning for breakfast after a run. I now have only 48 smoothies left to try from my little booklet from the Food Network. I will definitely be working this one into my morning routine.

Coconut Pineapple Smoothie
(Printable Recipe)

2 1/2 cups coconut water, divided
2 cups pineapple, chopped
1 1/2 tbsp. lime juice
1 tbsp. honey

What you’ll do:
Freeze about 2 cups coconut water in 1 or 2 ice-cube trays. It took me 2 ice-cube trays. When coconut water is frozen, I left mine overnight, in a blender combine 2 cups each chopped pineapple and coconut ice cubes, 1 1/2 tablespoons lime juice, 1 tablespoon honey and 1/2 cup coconut water.

    Yum! Sounds like a pina colada! And I love that you use frozen coconut water instead of ice- what a great idea :)

  2. My husband is the smoothie maker in my house and I can’t wait to show him this coconut and pineapple smoothie. Thanks for the heads up with the coconut water, I have never really cared for myself but maybe in this smoothie I will love it.

    I think those “50” recipe booklets that come in the Food Network Magazine are the best part of the magazine.

    I could definitely drink this after a long workout or a day being outside! It looks so refreshing, I can almost taste it.
