One of my favorite vegetables is asparagus and I love this particular way it is served.
1 bunch of asparagus
roasted red peppers
Italian dressing, homemade or store-bought
What you’ll do:
Trim tough root ends from asparagus spears. Place in microwave-safe bowl with a lid. Sprinkle asparagus with kosher salt and some pepper. Cover with lid and microwave on high power for 2 to 3 minutes. Stir to distribute seasonings. Cook another 2 to 3 minutes until asparagus is tender. Stir once more before serving. Slice red peppers into thin strips and distribute evenly over asparagus. Cut hard boiled eggs into disks and place over red peppers. Right before serving, drizzle dressing over the asparagus.
