So ever since we had the amazing wedding on the beach in the Grand Cayman, I have been thinking about this one salad that we dined on. It was the one thing that I went back to for thirds, it was that good. I wanted to try to recreate this salad at home. The first step was finding a ripe papaya that didn’t break the bank. Luckily, my Wegman’s had some for a reasonable price. I put it on the menu and decided to serve it with some burgers.

I searched high and low for a recipe, and found one, but wasn’t satisfied. I instead just took the ingredients of the recipe and loosely interpreted them. Unfortunately I didn’t write any of the measurements down, but the changes from the recipe were not that big. I just love how the sweetness of the papaya combines with the saltiness of the feta. The mint adds a refreshing zing to the salad. Since I will not be headed back to the Caribbean for some time or the Ritz for that matter, this version will hold me over.

Papaya & Feta Salad
(Printable Recipe)

Ingredients:
1 large papaya, seeded and diced, about 3 cups
1/2 cup chopped fresh mint leaves (I used a little less)
3 tablespoons extra-virgin olive oil ( I used about 2 tbsp.)
4 tablespoons lime juice (from about 1 lime)- I used lemon since that was all I had
1 tablespoon honey
Salt
Freshly ground black pepper
1 cup crumbled feta cheese (Again I used a little less)

What you’ll do:
Place the papaya and mint leaves in a medium bowl. In a separate bowl, whisk together the olive oil, lime juice and honey. Add in the feta cheese. Drizzle the dressing over the papaya and season with salt & pepper. Toss to coat.
