If you like piña coladas and getting caught in the rain…sorry I couldn’t resist and I apologize for getting that stuck in your head for the rest of the day. Of course I love them and will jump on the opportunity to sip one of these delightful drinks. Preferably on a hot beach with one hand wrapped around the drink and a book in the other hand. Since I will not be heading back to the Caribbean any time soon, I knew I had to make this immediately when I saw it in one of my magazines. I have used my ice cream maker many times, but never to make anything other than ice cream. I took advantage of having a pineapple sitting in my kitchen waiting to be used up. I also had some coconut water left over from the coconut-pineapple smoothie I made a few months back. So I think it was fate.

This comes together with incredible ease and the flavor of the sorbet is so refreshing. The past few evenings have been a tad warm here in NJ and it has been nice to slip out to our patio with a bowl of this to cool off. Another option, if you want to spice things up, is to drizzle some rum over top of the sorbet to make an adult treat. Yum! I can see us doing that for future BBQ’s with friends, I think it would be a great way to end a hot, summer evening!

Piña Colada Sorbet
(Printable Recipe)

Ingredients:
3 cups cubed fresh pineapple
1 cup coconut water
1/2 cup sugar
1 cup light coconut milk
2/3 cup cream of coconut

What you’ll do:
Place the first 3 ingredients in a blender, and process until smooth and sugar dissolves. Combine pureed pineapple mixture, coconut milk, and cream of coconut in a bowl; stir with a whisk. Cover and refrigerate until thoroughly chilled. Pour mixture into the freezer can of an ice-cream machine, and freeze according to the manufacturer’s instructions. Spoon sorbet into a freezer-safe container; cover and freeze for 2 hours or until firm.
