I absolutely love watermelon, but there is often a lot of it just for two people. When I saw this recipe, I knew immediately what I wanted to do with half of the watermelon that would be left over. Blair & I enjoy eating watermelon on summer nights for dessert, but there is no way we are able to eat an entire one by ourselves. I hate to waste so I sliced up the watermelon like I normally do and threw about half of the watermelon into the freezer to save up for this recipe.
It was two weeks ago when I was grilling and decided that since it was almost my summer, it was the perfect opportunity to make these margaritas. I recently have embraced the idea of margaritas and tequila. There was a brief stint after college where we were not friends, this may or may not have been due to a spring break trip to Mexico with some girlfriends. I am now eager to find new flavored margaritas to enjoy. The pomegranate margaritas are by far my favorite, but I wanted to find a delicious frozen alternative for the hot summer nights ahead. I am so glad I decided to make these because the flavors meld perfectly together. I cut back on the tequila, but you can add the full amount depending on how potent you would like your own drink.
2 cups diced seeded watermelon, frozen
3/4 cup tequila ( I did about a 1/2 cup)
1/3 cup triple sec (orange-flavored liqueur)
1 tablespoon sugar
2 tablespoons lime juice
2 cups crushed ice
Granulated sugar (optional)
Lime slices (optional)
What you’ll do:
Place frozen watermelon, tequila, triple sec, sugar, and lime juice in a blender; process until smooth. Once blended, add ice; process until smooth. Serve in glasses rimmed with sugar, and garnish with lime slices.
