Since school has been out I have had a lot more time to dedicate in the kitchen and we have had so many great meals that I simply can’t decide which ones to share first! So I thought as a special treat this week, I would give you an additional recipe. I mentioned before that Blair & I love pizza. We searched high and low for the best when we were in CT. We have one place that we now love in NJ, but Philadelphia magazine just published the best pizza places. Now I am itching to try all of them to decide the best for ourselves.
When we go out for pizza I always get traditional margherita and Blair gets pepperoni, so when we are making pizza at home I like to go outside the comfort zone. I don’t know about you but whenever we had pizza growing up we always had a side salad so inevitably I would end up dipping my crust in the leftover dressing on my plate. This particular pizza is different because the sauce is actually ranch dressing, genius! Combining two of my favorite things. It was also the perfect thing to use up some leftover grilled chicken from the night before. I absolutely loved everything about this pizza and will definitely be making it more often. Stay tuned tomorrow for a bacon salad that would go perfectly on the side with this meal.
Chicken Ranch Pizza
pizza crust, homemade or store-bought (I used a store-bought wheat crust)
¼ cup Ranch dressing
¾ cup shredded mozzarella cheese
½-1 grilled chicken breast, chopped into bite-sized pieces
1 tomato, seeded and diced
2-3 green onions, chopped
¾ cup shredded cheddar cheese
What you’ll do:
Preheat the oven and a pizza stone to 500° F. Allow the stone to heat for at least 30 minutes. In the mean time, cut a round of parchment paper the size of your pizza stone. (Alternatively, use a pizza peel.) Sprinkle lightly with cornmeal or semolina flour. Gently roll out the pizza dough into a large circle, leaving a thicker ring around the edge for the crust. Spread the Ranch dressing in a thin layer evenly over the unbaked crust. Sprinkle with shredded mozzarella. Top with grilled chicken, tomato and green onions. Sprinkle with shredded cheddar. Once assembled, carefully transfer the parchment round and pizza to the preheated baking stone and return to the oven. Bake for 10-12 minutes, or until the cheese is melted and browned.
