As I mentioned last week, I am doing my best to earn the title of grill master for the household. Every week on the menu I plan at least 3 meals on the grill. I would rather spend some summer time outside than hanging out in the kitchen. A few weeks ago, I was at my parents’ beach house and it was gloomy outside, I stumbled upon some magazines that were from a few years back. I spent some time flipping through them and came across several yummy looking recipes, this salsa being one of them.

On our first trip to the farmer’s market this summer, we tasted both peach and apple salsa, I loved the peach salsa, but Blair liked the apple one so that was the one we ended up taking home. Both were very good and I didn’t put up a fight. I couldn’t stop thinking about the peach version and knew I had to make this immediately when I saw it. This is a different type of salsa in that it has lots of fresh basil. I loved being able to pluck it from my garden out back. The flavors come together perfectly. I served this with dinner over some grilled chicken and then had the leftovers the next day with some tortilla chips. Either option is lovely, and if salsa is not your thing, why not just grill some peaches and serve them with some vanilla ice cream.

Grilled Peach Salsa
(Printable Recipe)

Ingredients:
4 peaches, halved and pitted
2 tbsp. unsalted butter, melted
1 cup seeded and diced plum tomatoes
1 jalapeno, minced
1/2 chopped fresh basil
2 tbsp. fresh lime juice
coarse salt & pepper

What you’ll do:
For Grilled Peaches:
Heat grill to medium- low. Halve and pit peaches; brush both sides with 2 tablespoons melted unsalted butter. Place peaches on grill and cover. Cook until charred and softened, about 4 to 5 minutes.

For Grilled Peach Salsa:
Prepare 1/2 recipe for grilled peaches; using a paper towel, rob off skins, and cut peaches into 1/4-inch pieces. In a medium bowl, combine peaches, plum tomatoes, jalapeno, fresh basil, and lime juice; season with salt and pepper. Serve with tortilla chips or on top of grilled fish or chicken.
