Happy Monday! After doing a poll on my Facebook page a few weeks ago, you guys voted for this popcorn recipe first and let’s be honest it is a great choice! My mom has this book called “It’s in a Bag” probably from 1980 on her kitchen shelf. It has great recipes and creative ways to bag these different recipes. This particular popcorn is a favorite from the book. I have made it several times for different presents and my mom makes it as gifts for us every single Valentine’s Day. She even drizzles chocolate on to some areas to make it like the famous Harry & David Moose Munch. I kept it traditional since I wanted it to be similar to Cracker Jack that you can get at the ballpark. It is incredibly addicting and I love the addition of peanut butter and peanuts to it. Make it today, but just be warned that you won’t be able to stop eating it.

Peanut Butter Caramel Corn
(Printable Recipe)

4 quarts popped popcorn
1 can(12 ounces) lightly salted peanuts
1 cup firmly packed brown sugar
3/4 cup dark corn syrup
1/2 cup butter or margarine
1/2 tsp. salt
3/4 cup smooth peanut butter
1 tsp vanilla
1/2 tsp baking soda

What you’ll do:
Preheat oven to 250degrees. Combine popcorn and peanuts in a large roasting pan. In a large saucepan, combine brown sugar, corn syrup, butter and salt over medium heat. Stirring constantly bring to a boil; boil 1 minute. Remove from heat. Add peanut butter and vanilla; stir until smooth. Stir in baking soda; mixture will foam. Pour over popcorn; stir until well coated. Bake 1 hour, stirring every 15 mins. Spread on lightly greased aluminum foil to cool. Store in an airtight container.
