Lately I have been loving discovering spritzers with new and interesting flavors. It seems to be the perfect refreshing treat on those hot summer nights when Blair and I sit outside grilling. It is also nice to be able to make the simple syrup a day in advance and then mix the rest of the ingredients right before serving. I am not quite sure why this recipe has berry in the title since the berries are simply a garnish, but the pineapple, lime, and seltzer are amazing together. It reminded me of the golden punch that my grandmother makes every Easter brunch. The recipe does not make much so if you are looking to serve a crowd I would double or triple it. We had enough for me to have one short glass and Blair to have one (very) tall glass. You could easily top this off with some vodka to make it an adult treat if that fits your fancy. Pineapple-Berry Fizz
(Printable Recipe)

1/3 cup sugar
1/4 cup water
1/4 cup lime juice
2 cups seltzer water, chilled
1/4 cup pineapple juice, chilled
blackberries and strawberries for serving
mint for garnish (optional)

What you’ll do:
In a small saucepan over high heat, cook sugar and water, stirring constantly, until dissolved, about 1 minute. Transfer to a pitcher, stir in lime juice. Chill. When ready to serve, stir in chilled seltzer water and pineapple juice. Top with blackberries and strawberries. Serve over ice, if desired.
