I know this looks like just plain old lettuce, but it is so much more. Say hello to my new favorite salad. What you have here is a basic salad with some sweet onion of your choice, I am on a red onion kick so that is what I used, covered in a warm bacon vinegar dressing. Now I know that this is a particular dish that I can eat on a regular basis and I will definitely be serving it as a treat. There are really no words to describe this amazing salad. The dressing is definitely the star. I had never tried warm dressing before and I am so glad I did because it takes the salad to a whole other level. Blair and I literally ate an entire bag of lettuce because we kept going back in for more. We had this alongside some grilled pork tenderloin, but I think it would be perfect with any protein of your choice. So if you are getting tired of your salad routine, make sure you bring this into your repertoire.
4 to 6 slices of bacon sliced
vadalia onions or a sweet red onion (about 1/3 of a cup)
1/4 cup cider vinegar
4 tsp. of sugar
1/4 cup of water
1/2 tsp. salt
1/4 tsp. black pepper
8 to 10 cups leaf lettuce, torn into bite-sized pieces
What you’ll do:
In a large bowl, mix together lettuce and sliced onions. Cook bacon until crisp; drain on paper towels. Set drippings aside and save for dressing. After bacon has cooled, crumble or cut in small pieces over the lettuce and onions. Mix vinegar, water, sugar, salt, and pepper (I usually taste and if needed may add a little more sugar). Then add those ingredients to the bacon drippings and cook until boiling. Pour hot dressing over lettuce; toss to coat. Serve at once.
