This recipe has been saved up for the longest time, and I feel badly that I haven’t shared it yet because I made these forever ago! And honestly they are something that needs to happen in your kitchen soon. Somehow I forgot about them, and honestly, shame on me. My co-worker Dorothy is famous for her chocolate chip cheesecake bars. I saw these on my friend Nicole’s blog and knew that a version completely made from scratch would be right up my alley. Dorothy’s version is perfect for those of you in need of a last minute dessert. I have included both versions below. Think of these as the perfect marriage between the chocolate chip cookie and a cheesecake. The bars are the perfect little treat, similar to the Oreo Cheesecake Cups I posted a few weeks ago. Both are individual treats at their finest.
Cheesecake Chocolate Chip Cookie Bars From Scratch
Chocolate chip cookie layer:
1/2 cup unsalted butter
1/2 cup butter flavored vegetable shortening (I just used butter)
1 cups brown sugar
1/2 cup granulated sugar
2 tsp vanilla extract
3/4 tsp salt
1 T cider vinegar
1 large egg
1 tsp baking soda
2 cups all-purpose flour
2 cups semisweet chocolate chips
1 package (8 oz) cream cheese, at room temp
1/2 cup sugar
1/2 tsp vanilla
What you’ll do:
In a large mixing bowl, cream together the butter, shortening, sugars, vanilla, salt and vinegar. Beat in the egg, then the baking soda and flour. Stir in the chocolate chips. Divide the dough into two equal portions and set aside. In a medium mixing bowl cream the cream cheese with the sugar until thoroughly combined. Beat in the egg and vanilla.
In a 9×13 pan, spread 1/2 of the cookie dough mixture evenly across the bottom. Dollops of dough will work and then I used a spatula sprayed with cooking spray to help aid with spreading. Spread the cream cheese mixture on the top of the cookie dough. With the remaining cookie dough, flatten chunks of dough between your hands into discs, and then place on top of the cream cheese mixture. (The dough discs don’t have to touch, just place them near each other so they cover the surface as well as possible.) Bake at 350 for 35-45 minutes, or until the top is brown and cooked through. Cool completely and store in the refrigerator.
Cheesecake Chocolate Chip Cookie Bars Quickie Way
2 packages chocolate chip cookie dough, softened
2 (8-oz) pkgs. of cream cheese
3/4 cup sugar
1 1/2 tbsp flour
1 tsp. vanilla
What you’ll do:
Slice 1 roll of cookie dough and lay on the bottom of 9″ X 13″ pan
Using a hand mixer, mix together cream cheese, eggs, sugar, flour, and vanilla. Spread on top of cookies in pan. Slice the second roll of cookie dough and place on top of cream cheese mixture. Bake for 35 minutes at 350 degree oven.
