We ended up nixing the blue cheese as a topping and topped ours with some Ranch dressing instead. I have listed both of those as options below for serving. The heat in this sandwich is not overpowering, especially because I am a wimp when it comes to spice. You could reduce the amount of hot sauce if need be. I also love the fact that it is made with ground turkey. Have I convinced you to add these to your menu plans soon?
Buffalo Sloppy Joes

Ingredients:
2 celery ribs, chopped
1 medium onion, chopped
1 medium carrot, grated
3 garlic cloves, minced
1 can (8 ounces) tomato sauce
1/2 cup reduced-sodium chicken broth
1/4 cup hot sauce (I used Frank’s)
2 tablespoons brown sugar
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1/4 teaspoon pepper
8 hamburger buns, split
1 cup crumbled blue cheese (optional)
Ranch dressing (optional)
What you’ll do:
Heat a large skillet over medium-high heat, coat with cooking spray. Cook the carrot, celery, garlic, onion, and ground turkey until the meat is no longer pink. Drain off any liquid excess. Stir in the remaining ingredients. Heat through over medium-heat for about two minutes or until sauce is heated. Serve on toasted buns, top with blue cheese or Ranch dressing.
