White Chocolate Cranberry Oatmeal Cookies

Meet the perfect fall cookie or the cookie with the longest title ever, whichever you prefer. Now that you have met, let me tell you a little about these little gems. A few years ago before I even knew the world of food blogging existed, my sister made these cookies for a family event. After my first bite, they were one of my favorite cookies ever, and also had a combination of flavors that I thought were to die for. When I asked her where the recipe had come from it opened my eyes to one of my now favorite sites. Since I have known about these for so long, I was just waiting for the perfect opportunity to make them. I saw that the cookie jar was empty and also I had some dried cranberries in the pantry, it was time.

When I told Blair about these cookies, his nose wrinkled, and I thought oh great I will just have to eat all of them myself. What a tragedy! Too bad that when they were fresh out of the oven and he had taken his first nibble, he was immediately hooked. Did I mention that our house smelled absolutely amazing too? I ended up freezing about 12 dough balls to make at a later date, which happened to be last weekend. Turns out it was so nice to have the option of some freshly baked cookies from the freezer. I think I might try that out some more in the future.

Just a little something that I would like to point out. For the past few months I have been using Google docs to create a printable version of each recipe for you, thank goodness some of my blogging friends showed me an easier way. At the bottom of each post, you will now see a green printer-friendly button that you can use to print out recipes. You have the option of removing the images as well. This makes my life much easier!

Cranberry White Chocolate Chip Oatmeal Cookies

3 eggs, well beaten
1 cup dried cranberries
1 tsp. vanilla
1 cup butter
1 cup brown sugar
1 cup white sugar
2 ½ cup flour
½ tsp salt
1 tsp ground cinnamon
2 tsp. baking soda
2 cups oatmeal
1 cup white chocolate chips

What you’ll do:
Preheat oven to 350 degrees. Combine eggs, dried cranberries and vanilla and let stand for 1 hour, covered with plastic wrap.

Cream together butter and sugars. Add flour, salt, cinnamon and soda to sugar mixture. Mix well. Blend in egg-cranberry mixture and oatmeal. Dough will be stiff. Fold in the white chocolate chips. Drop by heaping teaspoonfuls onto ungreased cookie sheet or roll in small balls and flatten slightly on cookie sheet. Bake for 10-12 minutes or until lightly browned.

    I make a version of these as well around the holidays. Try substituting 1 1/2 tablespoons of orange peel instead of the cinnamon. I also use fresh cranberries when available. This is an added step (quartering them and rinsing the seeds), but well worth it. I may need to bake some soon!

  2. I love these cookies too, I make a similar version around Christmas! I freeze balls of dough all the time, I love having the ability to eat a freshly baked cookie whenever I want. :)
