Happy almost Thanksgiving everyone! I hope you have a wonderful day with your family, friends, or whoever you are celebrating with. I hope that you go to bed with your bellies full and your heart full of new memories. Tomorrow we are headed to my parents for our annual meal with my Dad’s side of the family. I will be bringing some delicious stuffing which I hope to share with you prior to Christmas time. We have much to be thankful for this year.

If you are planning on heading out on Friday to kick off your holiday shopping with some Black Friday sales, may I suggest whipping up a batch of this baked oatmeal before or after you head out. I made this after the apple-cinnamon raisin version, and I can say that this one tromped the other. It screamed fall and holidays to me. I loved the spices and pumpkin in this version, it was creamy and delicious. Also it allowed me to use up some pumpkin leftover from the cupcakes. Blair and I enjoyed this over the weekend, and then even had leftovers that reheated wonderfully for work the next week. I plan to make this for my family around the holidays, it will be perfect. It also comes together in no time so you can enjoy your family members.

Baked Pumpkin Oatmeal

Ingredients:
3 cups quick cooking oats
¾ cup brown sugar, divided
½ teaspoon cinnamon
2 teaspoons baking powder
¾ teaspoon salt
1 cup milk
2 tablespoons butter, melted
2 eggs
2 teaspoons vanilla
¾ cup canned pumpkin

Preheat oven to 350 degrees. Prepare a 9 x 13 pan by coating it with cooking spray. In a large bowl mix together oatmeal, 1/2 cup brown sugar, cinnamon, baking powder, and salt. Mix well until oatmeal is coated. In a separate bowl, whisk together, milk, butter, eggs, vanilla, and pumpkin. Pour the wet ingredients over the dry and mix until incorporated. Spread into prepared dish and top with remaining 1/4 cup of brown sugar. Bake in preheated oven for 20 minutes. Serve with milk and enjoy.

  1. This sounds awesome Krissy. I’ve been looking for a new breakfast routine and wondering if baked oatmeal reheated well, so I’m glad to know that it does!

    I made this last night and it is great! I didn’t put the remaining bit of sugar on top (I dont like really sweet stuff in the morning) and this was perfect!! It’s not a super sweet oatmeal. I do wish It had a bit more pumpkin flavor (i’ll work on that next time). I ate mine with cottage cheese. Sounds weird, but it’s marvelous!
