Are you completely stuffed from yesterday like I am? You will find me lounging on the couch all day or if the spirit moves me, decorating for Christmas or checking off some house projects from my list. I can tell you that one place I will not be- anywhere near shopping malls. You couldn’t pay me to go near one today. If you aren’t too stuffed or get the urge to bake, please make these. They are my new favorite cookie. I know, I know I have said this before, but I am serious this time. I made these on a Friday, and then were gone by Sunday morning. Then I made another batch, and the same thing happened. Blair even told me that I must have put something in them since he could not stop eating them.

I am a chewy cookie kind of girl so if you are like me then this is the recipe for you. They puff up beautifully in the oven and are amazing slightly warm or cold or at 7:00 in the morning (don’t judge me). I know that this will be my new stand by cookie recipe for any type of gathering. Have I convinced you yet to make these? I promise you will not be disappointed. Just make sure you don’t eat them all in one sitting because you will want to, and then you will whine to me for giving you a bellyache.


Chocolate Chip Cookies

Ingredients:

3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 tsp. vanilla extract
2 c. all purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 c. bittersweet chocolate chips

What you’ll do:
Preheat oven to 350 degrees F. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet. Bake for 8-10 minutes, until barely golden brown around the edges. (The tops will not brown, but do not cook longer than ten minutes). Let cool on the sheet for five minutes. Remove from baking sheet and let cool completely.

    Wow, I just made these and they are totally my new favorite cookie recipe. I’ve been using one from allrecipes.com that calls for adding pudding mix into the batter, and those are SO good. But these are truly amazing. You were right, these are the best!

    Very excited to try this recipe, I’m always looking for the Platonic ideal of a chocolate chip cookie. Unfortunately, after following the recipe exactly and baking for 8 minutes, I opened my oven to find melted, greasy pools of (very delicious) hot cookie dough. What went wrong?

    drea, was your butter melted when you mixed it with the sugars? is your oven calibrated? maybe get an oven thermometer? those are the only two things i can think of that could have gone wrong. i made these today and they came out perfectly. i keep the dough in the fridge in between batches to keep the butter cold so the cookies fluff up nicely, but even the first batch that wasn’t refrigerated came out perfect.

    I’ve been trying to make chewy cookies for a long time but never found the right recipe.

    Just wanted to say I stumbled across your blog and this recipe from the wc board. I wanted to tell that these were the best chocolate chip cookies I have ever made. I have been on the hunt since living abroad in Europe you tend to miss the “American goodies” you can’t seem to find here. I took them to an expat meetup and these were a huge hit. I got a ton of compliments and many Americans wanted the recipe.
