We had Blair’s work holiday party the other night, I was so excited since they always have some great munchies and festive drinks. Tis’ the season for easy and delicious beverages. I whipped up a batch of these to serve with the appetizers at my parents’ joint birthday party. They were easy to make and deliciously tangy to drink. I have been embracing cranberry lately, and when I saw that lime was involved, I knew I had to try these out. Champagne is not normally at the top of my lists of things I like to drink, but for some reason at this time of year it is the only thing I want in my glass. It pairs beautifully with the cranberry and when you throw some frozen cranberries in there, you have an elegant cocktail to serve to your guests. If you have kiddies or preggers in the mix, there is the option of making a virgin version of this cocktail. Enjoy! I hope that you and your family have a blessed and merry holiday. Cranberry Lime Bellinis
12 oz (1 1/2 cups) cranberry juice, chilled
16 oz (2 cups) prosecco or champagne, chilled
Juice of one lime
Frozen fresh cranberries, for garnish
In a large pitcher, pour in the cranberry juice, prosecco or champagne, and lime juice. Stir to combine. Pour into champagne flutes or tall slender glasses and garnish with a few frozen cranberries in each glass. Serve chilled.
For the virgin version: Swap out the prosecco/champagne for 14 oz ginger ale and increase the amount of cranberry juice to 14 oz.
