Well we are less than a week away from the Super Bowl. Will you be watching, and who are you rooting for? Since my team, the Eagles, stuck it up all season, I have had little interest in football. When is spring coming so I can root for my Phillies? I most likely will still watch the game, but will be much more focused on the food. These tortilla roll-ups are a favorite at my work salad bar, and also have made an appearance on the blog before. I didn’t post a picture though, I guess you can say that I have learned a thing or two since I started blogging. People like to see the food! These come together really easily, and are a nice little cheesy bite. Served with salsa for dipping, and you have a nice little biteful. I have complied a list of football friendly ideas below, check back on Wednesday for one more idea for the big game!

Tortilla Roll-Ups
Ingredients:
12 flour tortillas
8 oz. cream cheese, softened
1 cup sour cream
1 (4 ounce) can chopped green chiles
3 tbsp. chopped green onion
2 tbsp. chopped red pepper
12 ounces sharp cheddar cheese, grated
favorite salsa for dipping

What you’ll do:
In a mixing bowl, combine all ingredients except for the salsa. Lay out a tortilla and spread a thin layer of the mixture onto the tortilla with a spatula. Roll up the tortilla and secure with a toothpick. Refrigerate for at least 2 hours or overnight. When you are ready to serve, cut the roll ups into 1/2 inch pieces. Serve with your favorite salsa.

  2. The rollups are so cute! I’m with you – I’m excited for spring and baseball season. Until then, though, I’ll enjoy eating the great treats this coming weekend during the big game. Thanks for the great ideas!
