Cookies are still at the top of my list when it comes to baking so I am always on the hunt for new and interesting combinations. I ended up giving Blair several different options and these were the ones he ended up choosing, I was really happy. They were definitely the easiest of the bunch plus I secretly love having leftover Oreos in my pantry. These guys did not last very long in our cookie jar. It was basically like biting into an Oreo blizzard which happens to be another guilty pleasure of ours. Since they didn’t last very long in the house, I will just have to make them again and again and again!
Preheat the over to 350 degrees. In a large ziploc bag, crush Oreos with a rolling pin. Set aside. In the bowl of an electric mixer, cream together the butter and sugars until light and fluffy (about 2-3 minutes). Add egg and vanilla and beat until well mixed. In a medium bowl, whisk together flour, baking soda, and salt. With the mixer on low, slowly add the dry ingredients into the wet until just combined. Gently fold in Oreo pieces. With a medium cookie scoop, scoop dough onto an ungreased cookie sheet about 1-2″ apart. Bake for 8-10 minutes, until the edges just start to brown. Let cool on baking sheet for a few minutes, then transfer to a cooling rack to cool completely.
