- Pizza night!
I am sure my list could be much longer and it definitely changes on a weekly basis. End of the week or weekend pizza night is one of my absolute favorite things. It doesn’t surprise me because I love everything about pizza. Normally I am a straight up Margherita girl and Blair is a pepperoni guy, but when we make pizza at home we like to experiment. I recently found a pizza dough that I love and hope to soon do a tutorial on it. I found it to be really frustrating in the beginning, but after a lot of practice I find it really enjoyable to make up a homemade pie at home. I have tried several different variations in the past, but this one & one I am posting soon have shot up to the top of my list.
This particular pizza came together quickly and was easy to make. We both absolutely loved it. The creaminess of the garlic herb cheese paired perfectly with the mozzarella and the shaved asparagus. I had never tried the Boursin brand, but I knew my store had to have it or something similar in their giant cheese section. Boy was it creamy and delicious, but let’s get real I have never really met a cheese I didn’t like. The shaving of the asparagus was a new technique that I had seen, but never tried. It was easy to make the little shavings by using a vegetable peeler, I ended up taking off the tops of the asparagus and adding those to the top as well. I just found a salad with the same technique that I will definitely be trying soon. Until then, I will be sure to have this pizza show up several more times this spring!
Shaved Asparagus Pizza
Pizza dough- I have been loving this one
Olive oil, for brushing
8 oz. asparagus spears
4 oz. fresh mozzarella, thinly sliced
3 oz. spreadable garlic herb cheese, such as Boursin
Kosher salt and freshly ground pepper
What you’ll do:
Preheat the oven and a pizza stone at 500˚ F for at least 30 minutes. Cut the tough woody stems off the ends of the asparagus spears. Use a vegetable peeler to shave the spears into ribbons. I then cut off the tops of the asparagus to use as well. Set aside.
Roll out the pizza dough into a 12-14 inch round. Lightly brush the surface of the dough with olive oil. Place the sliced mozzarella over the pizza dough in an even layer. Pile the asparagus shavings & tops over the top of the mozzarella evenly. Dot the surface of the pizza with the garlic herb cheese. Season with kosher salt and pepper.
Transfer the pizza to the preheated pizza stone and bake until the cheese is melted and bubbling and the crust is lightly browned, about 12 minutes. Remove from the oven and let cool slightly before slicing and serving.
