Tater Tots

Does anyone else think of Napolean Dynamite when they are served or eat tater tots? Here is your friendly reminder. For some reason, it was the stupidest movie of all time, but I watched it too many times than I would like to remember. My mom first made these “tots” for my brother and sister-in-law’s gender reveal party. I was pretty smitten by them and ended up eating more than my fair share of them. I ended up putting them on the menu for myself the following week.
They are not hard to make and I was able to prep them beforehand so that I could concentrate on the burgers when dinnertime rolled around. While Blair was stationed at the grill, I was working on frying them up. They come together fairly quickly and were a lot easier to make than I expected. I ended up making the entire recipe and then froze half of them for a later time. I will have to report back to you if I have success with it. My logs of dough were nowhere near perfect, but as you call tell from the picture they plumped up beautifully once fried. I absolutely adored the addition of the fresh rosemary. During the party at my parents’ house, I thought my sister Melissa was going to smack me because I believe I said it about five times. These will be a nice rotation as a side dish on those occasional burger nights.

Tater Tots

6 medium starchy potatoes, peeled and cubed
3 tablespoons finely grated onion
4 tablespoons flour
1 egg
1 tablespoon fresh rosemary, minced
Finely ground black pepper
Oil, for frying

What you’ll do:
Peel, cube, and boil the potatoes until tender. Drain, let cool slightly. Pass the potatoes through a ricer into a mixing bowl. Combine with the grated onion, flour, egg and minced rosemary and season with salt and pepper. On a floured surface, roll into 1-inch-thick logs and cut into tots.

Heat the frying oil in a deep fryer to 350°F or heat a few inches of oil in a large Dutch oven. Fry the tots in small batches, do not overcrowd them. Season the cooked tots with a little extra salt.

I love tater tots, they remind me of school lunches as a kid. I never ate the mystery meat, but I always ate the tots.
