As we all know Sunday is Mother’s Day, and I have to say that I am extremely blessed to have a wonderful mother. Being the mother of five children, she handles herself with such grace. My siblings are known to make fun of me because I strive to be like her in every way. I admire her patience, her kindness, her creativity, and her love for her family. One day, I aspire to be half as good a mother as she is to all of us. Even though Mother’s Day should really be every day, I think it is nice to be able to thank my mom for her endless support, love, and advice on this special day. As for me, I will be cooking up her dinner on Sunday night. I will also be honoring my grandmother and my sister-in-law (a mom to be!)
Growing up serving my mom breakfast in bed was never an option because she never sleeps in. If I still lived at home, I would definitely be making these pancakes for her. They are beyond amazing. Blair and I recently had them for dinner when I realized that I had no chicken defrosted and had neglected the fact that I was supposed to marinate the flank steak. These pancakes look super complicated, but in reality they are very simple to make. You start off with a basic pancake batter or cheat and use your favorite box mix, then swirl in a brown sugar/cinnamon concoction. The cinnamon swirl ends up creating a crater like crusty filling on the pancake. It is then topped off with a warm cream cheese glaze which ends up being the perfect topping. The overall combination of flavors makes you feel like you have slaved in the kitchen for hours making the perfect cinnamon roll. Believe me when I tell you that if you make these for your mom, you will be her favorite child. And if your husband makes them for you, you will seriously want to love on him. Mom, I will try to convince Melissa to makes these for you on Sunday ;). Happy Mother’s Day to all you moms out there!
