Sante Fe Chicken Salad

It’s about that time of year when I am just about done with packing lunch every single day. It seems that every year with about a month left of school that I fall into a rut. I started the year off right with this Creamy Chicken Salad and have made it many times since then. Unfortunately, I have grown sick of that as well. I am always on the lookout for new ways to create chicken salad. Since I have an undying love for Mexican food, I was completely stoked when I came upon this recipe.

Basically it includes all of my favorite things from Mexican food and uses them in a satisfying chicken salad. The base for this salad is sour cream, but I could see the use of Greek yogurt working well here too. The addition of lime, cilantro, green onions, and spices takes it up to a whole new level. Once you combine all your ingredients, you add in some black beans, corn, and red pepper. I enjoyed this in several different ways, first up was just how they are seen here in wrap form with some fresh avocado. The next day I enjoyed it on a bed of lettuce with some avocado and some ranch dressing. Both of these made me forget my lunchtime blues.

And now for the giveaway, I don’t know about you, but I am always on the hunt for new containers to store things. The folks over at OXO have graciously offered me a set of their new lock top containers and one set for a lucky reader! I have been using these containers for the past few weeks carting my lunches back and forth. The big container is great for leftovers while the small ones are the perfect size for snacks. They are extremely durable and can easily transfer from the freezer to the microwave to the dishwasher…all making your life much easier. They also stack easily which makes it convenient for storage when you are not using them. And lastly, the clear design makes it easy to identify whatever you store in them.

How to win:

This is the first time I’ve been on your site but I love this recipe! I’m not a huge fan of chicken salads because I don’t love sour cream but all the flavor plus Greek yogurt is PERFECT. My husband and I are trying to buy our first house and are brown bagging EVERY lunch. I’d love to have containers that seal so that I can take salads, dressings, croutons and other fun dips without worrying about them spilling on my work documents.
