It’s about that time of year when I am just about done with packing lunch every single day. It seems that every year with about a month left of school that I fall into a rut. I started the year off right with this Creamy Chicken Salad and have made it many times since then. Unfortunately, I have grown sick of that as well. I am always on the lookout for new ways to create chicken salad. Since I have an undying love for Mexican food, I was completely stoked when I came upon this recipe.
Basically it includes all of my favorite things from Mexican food and uses them in a satisfying chicken salad. The base for this salad is sour cream, but I could see the use of Greek yogurt working well here too. The addition of lime, cilantro, green onions, and spices takes it up to a whole new level. Once you combine all your ingredients, you add in some black beans, corn, and red pepper. I enjoyed this in several different ways, first up was just how they are seen here in wrap form with some fresh avocado. The next day I enjoyed it on a bed of lettuce with some avocado and some ranch dressing. Both of these made me forget my lunchtime blues.

Sante Fe Chicken Salad
For the Chicken Salad:
2/3 cup sour cream
3 tablespoons lime juice
1/2 – 3/4 teaspoon salt
1/4 – 1/2 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon cumin
1 – 2 tablespoon minced cilantro
2 – 3 green onions, sliced thin
1 stalk celery, diced
2 cups poached, diced or shredded chicken
2/3 cup black beans, I like Bush’s brand best
1/3 cup diced red bell pepper
1/3 cup corn kernels
For the Wraps:
Burrito Sized Tortillas
Salad Greens or Baby Spinach
What you’ll do:
For the Chicken Salad:
In a medium bowl, combine the sour cream, lime juice, salt, pepper, paprika, cumin, and cilantro. Whisk to combine. Add the chicken, green onion, and celery to the sour cream mixture. Stir until the chicken is well coated. Fold in the black beans, bell pepper, and corn. Cover and chill until serving.
To Prepare the Wraps:
Layer chicken salad, salad greens or baby spinach and avocado slices inside burrito sized tortillas. Fold up the ends and roll the wrap to seal it. Slice in half. Serve with salsa on the side, if desired.
