Strawberry Margarita
Happy almost Cinco de Mayo! I promised you one special margarita to kick off your celebration right. I have a slight obsession with fresh strawberries when every summer rolls around. It is by far my favorite fruit to eat. I love to eat them for dessert on those hot evenings, that is of course on the nights I am not consuming ice cream. So when I saw this recipe for a strawberry margarita, I needed it in my life right away. Margaritas + my favorite fruit=genius!

I ended up mixing these up when Blair was away for work and it was my treat with dinner every night. The strawberry syrup is simple to make and you can make it ahead time just in case you feel the need to have it in your fridge at all times. Because after you taste these, you will want to. If you have kids in the mix, may I suggest leaving some of the simple syrup aside for some Strawberry Lemonade. You will be happy, they will be happy, it’s a win win. I am making these for my Cinco de Mayo fiesta tomorrow! I also plan to make them many times throughout the summer with all those wonderful berries.

Strawberry Margaritas

For one drink:
2 oz. tequila
Splash of triple sec
Juice of ~half of a lime
⅓ cup strawberry simple syrup (ingredients below)
Lime wedges, for garnish
Sugar for rim of glass

For strawberry simple syrup:
1 cup granulated sugar
1 cup water
1½ cups strawberries, hulled and sliced.

What you’ll do:
Prepare the syrup:
In a medium saucepan over medium heat, combine 1 cup sugar with 1 cup of water. Bring to a boil and allow sugar to dissolve, stir occasionally. Remove from heat and cool completely.
In a blender, combine 1 cup simple syrup and 1½ cups sliced strawberries and blend until combined. If desired, strain the mixture over a fine mesh strainer to remove the seeds.

To make the margarita:
Rub the edge of a glass with a lime wedge and dip in sugar. Combine tequila, triple sec, lime juice and strawberry syrup in glass and stir. Fill with ice. Adjust as needed.

    All of the margarita recipes popping up on all of my favorite blogs are driving me crazy! Crazy in a good way of course! This one looks so good!
