If you haven’t seen this recipe yet, then you have been living under a rock. This practically blew up on every site that I frequent so I decided I had to see what all the fuss was about. Could chicken tacos be that good with only 3 ingredients? Obviously, the reason why this recipe is so popular is because it is easy and most likely you have the ingredients on hand. If you are like me, multiple jars of your favorite salsa are in your pantry. Another great thing about this recipe is once you eat it as chicken tacos, you can use the leftovers in many other ways. Some things that came to my mind were quesadillas, salads, enchiladas, taquitos, etc.
The first time that I made these I was quite disappointed because I had left the crockpot on throughout the day while I was at work and they ended up being burnt. So I decided that the cooking time for my crockpot model needed to be lower and I needed to do this on a weekend. Learn your crockpot and adjust the cooking time as needed. This recipe also sparked Blair’s interest, he has a new invention in mind because of it. Truth be told, sometimes the fewest ingredients end up making the best meals. This will definitely be on heavy rotation once September rolls around and I am back full time to work!
Crockpot Chicken Tacos
1 envelope Taco Seasoning or 3 tbsp. homemade seasoning
6 pieces Boneless, Skinless Chicken Breasts
1 16-ounce jar Salsa
What you’ll do:
Combine ingredients into a crock pot and stir to blend the seasoning with the salsa. Cook on high for 3 to 5 hours or on low for 5 hours. When done, the chicken should shred easily when stirred with a fork or shred in your stand mixer.
For tacos, serve the chicken with tortillas or shells with your choice of toppings.
