Isn’t it funny that we go around asking little kids the question, “What do you want to be when you grow up?” I think my mind changed about 1,000 times over the course of my childhood. I do know that if you look at my 8th grade yearbook, it tells you that my future plans were to attend Dickinson College and become a pediatrician. Then people crash those dreams by telling you the amount of schooling you have to go through, yikes. Clearly, I changed my mind, I am happy on the career path that I have chosen and it did end up involving working with kids, but sometimes I don’t think we educate our kids on all the different possible jobs that are out there. So where am I going with all this? The more I work on this little blog of mine, the more passionate I become about the whole food photography process, why didn’t someone tell me that food styling was a thing? I am nowhere near magazine quality pictures nor would I ever leave my teaching job, but I literally squeal every time that I get a picture right. I reflect on how much I have learned over the past year and can’t believe some of the photographs I am taking.
This happens to be my current favorite photograph probably also because it showcases my favorite food pizza. As I mentioned last week, Blair and I adore pizza. If it were socially acceptable, I think we might eat it every night, but that is not practical and certainly not healthy. Until I tried this recipe, I had yet to enter the awesomeness of grilling pizza, whoa, it takes it to a whole new level. Now technically, we cheated a bit on this recipe, but baby steps right? We started off with a pre-made garlic naan and topped it with some cooked sausage, spinach, and mozzarella. A drizzle of olive oil and fresh chopped basil finished it off. The naan cooks up wonderfully on the grill making an incredibly crispy crust. I am a crispy crust kind of girl. It reminded me of brick oven pizza that I adore so much at a local restaurant. We have made these several other times with various toppings and each time we fall in love a little bit more. Plus it is so easy and comes together ridiculously quickly. We do have to eventually try real grilled pizza, but until then we will happily enjoy this.

Grilled Sausage, Spinach, & Mozzarella Pizza Ingredients: 3 garlic naan flatbreads (or any other prepared crust) 3 sausages, any variety you like 1 cup pizza sauce 1 cup shredded Mozzarella fresh spinach fresh diced tomatoes fresh basil olive oil What you’ll do: Preheat your grill to medium high. Cook the sausages ,using your desired method of cooking, until browned and cooked through. I took mine out of the casing and crumbled them. I ended up cooking them on the stovetop the night before for easy assembly the next day. Spread naan with pizza sauce. Top with sausage, cheese, fresh spinach, and tomatoes.  Grill for 15-25 minutes, until the bottom of the crust is brown and crispy and the cheese is melted. Sprinkle with fresh basil and drizzle with oil.

      Given the chance, I would probably eat pizza every day – sadly my husband gets sick of it – WTF?

      I used unglazed quarry tiles in my gas grill to make a mock pizza oven – works out great!
