Blair always tells me that I eat pizza without him all the time. Sometimes, I end up randomly having it for lunch during the work week so then I don’t like to eat it for dinner. He is always so disappointed since we both love it so much. Now that it is summer, I have been trying to be better about serving us pizza for dinner. It also helps that I have found a pizza dough that I am smitten about. Awhile back, I made this pizza bubble ring (it desperately needs an updated picture) using biscuits as the base,  so I was excited when I saw these pizza bites. What you have are individual stuffed pieces of pizza dough that are baked up until golden brown. I ended up doing a filling combination of mozzarella and pepperoni, but really whatever pizza toppings you love would work as well. We had fun dunking them in pizza sauce and homemade ranch, I told you I was obsessed.

At first, I was a little crazy measuring out the dough using my kitchen scale, but then it was taking way too much time. I decided to just rip off chunks and roughly get the same size for each bite. These are probably more friendly for snacking and they would definitely be a hit at any party, but we enjoyed them for dinner one night with a side salad. Whatever you choose, grab your favorite dough and let the dunking begin!

Pizza Bites

1 batch pizza dough
4 oz. mozzarella cheese, cubed (about 20-24 pieces)
Sliced pepperoni
For topping:
Olive oil
Italian seasoning and/or garlic powder
Grated Parmesan cheese

What you’ll do:
Preheat the oven to 400˚ F.  Lightly grease a 9-inch pie plate or cake pan.  Divide the pizza dough into 20-24 roughly equal sized pieces.  Take one of the dough pieces, top with a cube of cheese and a slice or two of pepperoni.  Pull the edges of the dough around the fillings and pinch closed.  Place seam-side down in the baking dish.  Repeat with the remaining dough pieces.

Lightly brush the tops of the dough balls with olive oil.  Sprinkle with Italian seasoning and grated Parmesan cheese.  Bake for 20 minutes, or until the tops are golden brown.  Serve warm, with dipping sauce as desired.

  1. Would you believe I like having pizza for dinner more than my husband? Only if it’s homemade though. I’ll make this for myself and some friends. :)
