Happy almost 4th of July, one of my absolute favorite holidays. I hate the fact that it is on a Wednesday this year not that it affects me, but it does affect Blair. The past few years we have had a little BBQ of our own, just the two of us since previously we were in CT, and last year we had a wedding on July 3rd. This year we plan to hopefully brave the traffic for the day and head to the beach with my family. We will see what we end up doing. I love seeing all the creative red, white, and blue desserts that the food blogs I read have to offer. Last year, I made Firework Sugar Cookies that were so simple, yet so impressive.

This year it was a similar situation, I saw the cover of my Everyday Food magazine and just had to try out these popsicles. It seemed that last summer I was the only one who wasn’t trying making their own popsicles at home. So many great combinations were popping up all over the web, I have several saved to try myself. I decided to jump on the bandwagon, and buy myself some molds. You can easily use cups and popsicle sticks as well. These particular popsicles are extremely versatile since you are able to swap out the fruit for whatever kind you like. We ate these very contently on our walks around the neighborhood after dinner every night. Blair’s favorite part of the popsicle was the strawberry section at the top, I surprised myself by enjoying the yogurt (white) part the best. I absolutely loved the addition of the lime juice to each layer, it gave it a tangy and refreshing taste.

These are a bit time consuming, but definitely easy. Each layer gets  a half hour freeze in between, I found that I was able to mix up the next layer and do some cleaning while each layer froze. These will make the perfect dessert for Wednesday or a little snack during all the 4th of July day fun. I will be back tomorrow with an updated BBQ staple for you all!

PS- Don’t I just have the best hand model? I offered to do it since I thought I was being annoying, but of course darling husband didn’t want me to steal his thunder. He likes seeing his hands all over Pinterest 😉

Red, White, & Blueberry Popsicles

2 cups halved hulled strawberries
6 tablespoons sugar, divided
5 tablespoons lime juice (from 3 limes), divided
1/2 cup full-fat plain yogurt
3 tablespoons heavy cream
2 cups blueberries
What you’ll do:
For the strawberry layer:
In a blender, combine strawberries, 2 tablespoons sugar, and 1 1/2 tablespoons lime juice. Puree, then pour through a fine-mesh sieve into a bowl, pressing on solids; discard solids. Divide puree among six 4-ounce or eight 3-ounce ice-pop molds. Freeze until firm, about 30 minutes.
For the yogurt layer:
Combine yogurt, cream, and 2 tablespoons each sugar and 2 tablespoons lime juice. Remove molds from freezer and top with yogurt mixture. Freeze until firm, about 30 minutes.
For the blueberry layer:
In clean blender, puree blueberries, remaining 2 tablespoons sugar, and remaining 1 1/2 tablespoons lime juice. Pour through clean sieve into a bowl, pressing on solids; discard solids. Remove molds from freezer and top with blueberry puree. Freeze until solid, 6 hours more (or up to 1 week). Just before serving, briefly run molds under hot water to release pops.
