The thing that I probably loved most about this french toast was the fact that it was prepared for me by Blair while I sipped coffee on the couch. It was lovely. I ended up getting out all the ingredients for him because I just knew that my coffee time would be interrupted by a question of where something was. Once he was all set up, all I had to do was wait for the finished product to photograph. I absolutely love french toast, it brings back many memories of my childhood and my mom preparing it for all of us. The twist on this recipe adds in some fall flavors, the pumpkin and all those yummy spices associated with this time of year. This would be the perfect breakfast for all the pumpkin lovers on Thanksgiving morning coming up!
14 slices whole wheat sandwich bread
1/2 cup milk
3/4 cup canned pumpkin
1 tsp. pumpkin pie spice
splash of vanilla
What you’ll do:
In a medium bowl, whisk together the eggs, milk, pumpkin and pie spice until smooth. Dip each side of the bread and cook on a hot, greased griddle or skillet. Flip after 1 – 2 minutes.
