Well as we all know, the holidays are rapidly approaching! Are you ready?! I spent my weekend, wrapping presents and I have a few holiday related projects to get done this week. My students’ gifts need the finishing touches and I will be making a special treat for some of my coworkers. Other than that, cleaning and planning out my menu for the arrival of my in-laws is my next priority! I am getting excited for the time off to spend with family and friends.

The weekend before last, we threw a surprise 60th birthday party for my Dad. My sisters and I had to do most of the cooking/preparing because my Mom wasn’t able to complete it with my Dad being around. We kept it very simple. I saw this cheese ball on Pinterest and just knew that my sister, Melissa, would go crazy over it. It is all the flavors of your buffalo chicken dip aka crack dip in one convenient ball. It comes together easily and there is the perfect amount of spice! This is the best thing to bring to parties yourself because it is served chilled (it would be yummy warmed up, too) so you don’t need to worry about inconveniencing your host by using the oven. My gut told me to add in some ranch dressing while I was mixing it up, but I ended up not doing it. I think in the future I will definitely add some into the mix.

On a side note, I want everyone to know that my heart goes out to all the victims of Sandy Hook Elementary School. I can not even fathom what that community is going through right now. I sat and cried on Friday after work feeling the pain of all the families there. As a teacher, I do not know what I would have done to keep myself calm in that situation with my 18 little ones looking up at me as we huddled in the corner. Those kids and the staff at the school are truly heroes. Praying that they all find comfort during this difficult time.

 

Buffalo Chicken Cheese Ball

Ingredients:

1 cup chicken, cooked and shredded
1/4 cup crumbled blue cheese
1/4 cup shredded mozzarella cheese
1/2 jalapeno pepper, finely diced
2-3 Tbsp hot sauce (I like Frank’s)
1 package (8oz) cream cheese, softened
1/2- 1 cup shredded cheddar cheese for rolling

What you’ll do:

In a medium bowl, mix all of the ingredients except the cheddar cheese. Shape into a ball, and then roll in the cheddar cheese to coat. Wrap the cheese ball tightly in plastic wrap, chill at least an hour before serving or overnight. Serve with chips, crackers, or sliced veggies.

    In my family Christmas Eve has become all about the appetizers, so of course I’m always on the look out for new recipes! This year we won’t be able to be with our families, but I plan to keep the appetizer spirit alive. :)

    Also, my heart goes out to all of the families affected by last Friday’s tragedy. I also think of all my teacher friends and how close to home that fear and sadness hits. It’s just awful.
