We watched football yesterday, and to be honest I could care less who is in the Superbowl this year. The things I could care about is the munchies that come along with watching football. Blair will watch the games and I immediately want many different types of dips to magically appear in front of me, wouldn’t that be awesome? Unfortunately, that is not realistic and if I want dips, I need to make them myself.
My sister, Melissa, made this for her Christmas work party and she told me everyone was obsessed with it. She told me that I just had to make it. So I waited for the perfect opportunity to whip a batch of it up. I ended up making it for work so there was no football involved, but like I said it would make the perfect football watching snack. The potato chips serve as the “baked potato” part and the goodies inside the dip are a mix of your favorite potato toppings. When you dip the chips, you get the effect of a baked potato which is just heavenly. So whether you are a football fan or just a fan of dips, make this and you won’t be disappointed!
Baked Potato Dip
16 ounces sour cream
16 slices (12-ounce package) bacon, cooked and crumbled
8 ounces sharp cheddar cheese, shredded (about 2 cups)
1/3 cup thinly sliced scallions or chives
What you’ll do:
Mix all the ingredients in a medium bowl and refrigerate for at least one hour before serving to allow flavors develop. Garnish with extra shredded cheese, crumbled bacon, and chopped chives, if desired. Serve with your favorite potato chips or other favorite dipping vehicle. Dip can be stored in the refrigerator for up to 1 week.
